THE LEAD VERDICT
“every single thing on the seafood tower came out at the exact right temperature - oysters were ice cold and briny, prawns had that perfect firm snap, the crab meat was sweet and delicate. then there was that warm crusty bread right there with the cold shellfish and it just worked so well”
“risotto showed up lukewarm at best, the grains went from creamy to like gluey which means it was sitting under heat lamps for way too long”
ALSO FILED
“okay teh sablefish waas PERFECT - like perfect caramelization on the skin and that buttery flaky inside, you know? ok but the miso glaze had this amazing balance between sweet and umami, reduced to exactly the right thickness without being too sweet would recommend”
“the hollandaise on the vegetables was totally broken, like you could actually see the oil separating which is pretty embarrassing for a kitchen that should know better”
“chocolate souffle was ethereal honestly, hot airy inside with molten center and then the vanilla bean ice cream was perfectly balanced didnt melt too fast”
“seriously wine selection by the glass was pretty limited adn the sommelier seemed rushed when talking about pairings would go back”
“finally some actual heat in Vancouver! teh chef's special seafood had this subtle spice that builds up on you, kinda reminded me of good Nashville dry rub - complex layers that sneak up rather than just burning your mouth off”
“most of the menu was pretty timid with seasoning which i get for fine dining but coming from eating proper spice growing up, everything else felt kinda safe smh”
“showed up at 9:30 adn omg the harbor views were insane with all the city lights bouncing off the water, like perfect vibe for a late dinner date haha”
“service def slowed down after 9 PM tho, probably cuz they were closing at 10 and just wanted us out”
“seriously sablefish with miso glaze was honestly perfect - tender flaky fish with this caramelized exterior that had the right balance of sweet and umami you know”
“bok choy was overcooked and mushy tho, completely lost any texture against the fish”
“ok but teh server seriously went above and beyond for my 8-year-old who's super picky - jsut brought him plain pasta with butter when nothing else on the menu would work!!! and those waterfront views kept all three kids totally mesmerized the whole time, which honestly saved what could've been a disaster at a fine dining place ha”
“45 bucks per adult entree though... bringing the family here felt like paying a mortgage payment, especially when the kids barely ate their expensive dishes”
“duck breast WAS FIRE!! like crispy skin pink inside amaazing flavor idk”
“waited like 25 min jsut to get bread tho skip it”
