THE LEAD VERDICT
“ok so the shared plates thing at Nightingale actually works out great money-wise - thier cauliflower with tahini and pomegranate is like 16 bucks and honestly feeds two people easily!!! gotta say tastes way more expensive than it is. portions are generous across the menu so its surprisingly affordable for the quality youre getting”
“cocktails are pretty pricey tho at like 16-18 each which adds up quick if youre trying not to spend a ton. just get wine or beer if ur watching your wallet”

“ok so the duck confit was actually perfect - like the skin was SO crispy but the meat inside stayed juicy somehow but clearly they took their time rendering that fat. and the sauce was insane, you could taste like all the layers they built up wiht the deglazing and stuff”
“the roasted veggies tho... felt like they just threw them in a hot oven adn called it a day. so like they had these harsh burnt edges instead of being like sweet and caramelized the way they should be no joke”
“their handmade pasta reminded me why I love actual Italian food - every noodle had that perfect bite, you know? the fresh semolina and the timing was just RIGHT. so like sauce stuck to it without drowning everything which honestly reminds me of what my nonna always said pasta should be skip it”
“def but then the tiramisu was such a letdown - way too dense adn sweet, missing that whole coffee bitterness and mascarpone thing that makes it actually good ha”
“the space is so cool with all the exposed brick adn those warm Edison bulbs everywhere - gives it this buzzy feel without being snobby about it. real talk the open kitchen is fun to watch and that big communal table in the middle actually makes you feel like youre part of whatevers happening on Hastings Street”
“gets LOUD when its packed tho especially by the bar!!! if you want to actually talk to someone request a table by the back windows where its way better acoustically”
“finally found a place in Vancouver that gets spice!! thier house harissa is actually interesting - not just hot but like smoky and fruity and builds on your tongue?? I asked for extra heat and they ACTUALLY gave it to me”
“for real teh bread tho was so bland just generic rolls when they could've offered something interesting to like balance out all those bold flavors”
“their bone marrow wiht herb salad is perfect - the marrow is rich adn buttery and just spreads on the crusty bread like butter, and the bright herbs balance it out so nicely”
“the Brussels sprouts tasted weirdly bitter and way overcooked. wouldve been way better if they had that nice caramelization on them”
“i mean got a perfect seat at the bar where you can see into the kitchen and watch them work - honestly impressive how precise everyone was. and my server had the timing DOWN, like knew exactly when to check in without being annoying about it which is actually rare when you're solo smh”
“the music was jsut a bit too loud to actually talk to the bartender which was frustrating cause that's kind of the whole vibe I wanted”
“tbh ok the duck breast was cooked flawlessly - the skin was scored and rendered all crispy and perfect, meat was medium-rare exactly, and their cherry gastrique cuts through the richness so well. honestly their sauces are consistently impressive they clearly know what theyre doing with actual French technique chefs kiss”
“the hollandaise on the weekend brunch eggs Benedict was kinda broken and grainy which suggests they either cranked the heat too high or didnt whisk it enough during emulsification”
